I use an organic, nutrient-rich mix to give them the best start. • Plenty of Light – Seedlings need about 12-16 hours of light per day, so I keep them under grow lights to make sure they don’t get too leggy. • Steady Watering – Moist but not soggy is the goal. If you’ve ever waited too late to plant and ended up with a sad little harvest, trust me—I’ve been there! Starting seeds indoors gives our plants a head start, letting them grow strong before they move outside. It also means we can control the conditions, keeping those baby plants safe from crazy weather, pests, and whatever else Mother Nature decides to throw our way. What’s Growing Over Here? Eggplant I can’t lie—eggplant is one of my favorites. It’s so versatile, whether roasted, grilled, or blended into a smooth, smoky dip. Getting these seeds going early helps ensure a steady supply of plump, deep-purple beauties all summer long. Cucumber There’s nothing like a fresh, crisp cucumber straight from the vine. Whether tossed in a salad or infused in water for a refreshing sip, cucumbers are a must-have in the garden. Plus, when the season really kicks in, I’ll be making plenty of farm-fresh pickles! Bell Peppers & Hot Peppers Sweet or spicy? I say both! Peppers take their time to grow, so I always start them early to make sure we get plenty for fresh salsas, stir-fries, and stuffed pepper recipes. And let’s be real—there’s nothing like a homegrown pepper to add some serious flavor to your meals. Zucchini Zucchini is a garden favorite because it just keeps on giving. I use it in everything—zoodles, fritters, bread, and even sneaking it into desserts. It grows fast once it gets going, so starting seeds now means an early (and steady) harvest later.
